<p>A major UK review of studies into the effects of eating eggs has found that egg contains a powerful ingredient that can help to cut the amount of calories people go on to eat at lunch and dinner.</p>
<p>Scientists say boiled, fried, poached or scrambled, eggs keep people fuller for longer compared with other common breakfast foods.</p>
<p>This appears to help people who are desperately trying to resist tempting but naughty afternoon snacks such as biscuits, cake or chocolate.</p>
<p>The review, published in the journal Network Health Dietitian, also revealed that the specific proteins found in eggs are far superior to other types when it comes to keeping hunger at bay.</p>
<p>Dietitian Dr Carrie Ruxton examined the results of six different studies over eight years.</p>
<p>The studies show a consistent effect on satiety and short-term energy intake. Two studies found changes in appetite-related gut hormones, which may explain why egg-eaters feel full.</p>
<p>A single, longer-term study revealed that people who ate an egg breakfast rather than having cereal had a significantly greater weight loss and lost inches around the waist.</p>

In their most basic state, cream sauces can be rich but bland. In the healthy kitchen, we can change that by packing in the vegetables. Fresh or dried mushrooms are a great choice, but so are roasted peppers, roasted butternut squash, carrots, and caramelized onions.</p>
<p>Herbs, tomato puree, horseradish, and even mustard can help build flavor and thicken the sauce.  In summer, I chop up parsley, thyme, and basil, then freeze in ice cube trays. Later I add a cube or two to sauces for a burst of freshness.</p>
<p><strong>Healthy Swaps for Thickeners</strong><br />
Most sauces are thickened with flour or starch of some sort using one of two methods: a roux or a slurry. Rouxs are equal parts of fat (oil, pan drippings, or butter) and flour that are cooked together before adding the liquid. Slurries are a cool mixture of water and flour or starch that are shaken or stirred together then added to sauce that&#8217;s already partially cooked. Rouxs are often used to start sauces; slurries are used to thicken sauces or pan juices</p>
<p>Even the traditional roux can be tweaked to make it lighter. The easiest swap is to use whole wheat flour in place of white or all-purpose flour. Traditionally you would use equal parts of fat, usually butter, and flour, the higher-gluten whole-wheat flour requires a bit more liquid so you&#8217;ll need to experiment.</p>

<p>While many believe coffee drinking may be dangerous to the heart, researchers at Beth Israel Deaconess Medical Center in Boston said moderate consumption of your daily jo could be beneficial.</p>
<p>The scientists analyzed five prospective studies, which included more than 140,000 men and women, that related to coffee consumption and heart risk. Four of the studies were based in Sweden, and one was conducted in Finland. They found that those who drank a moderate amount of coffee daily, defined as the equivalent of two 8-ounce American cups per day, may experience protective benefits against heart failure by as much as 11 percent.</p>

<p>Researchers from Penn State followed 92 menopausal women for just over two weeks. The women, aged 40 to 59, had mild to moderate symptoms, but were recruited for a physical activity study, not a study on menopause, researcher Steriani Elavsky said in a release. The women were also not on any form of hormone therapy.</p>
<p>Participants wore accelerometers to monitor their physical activity and also wore monitors that measured skin conductance, which varies with the moisture level of the skin.</p>
<p>The women self-reported hot flashes throughout the 15-day period.</p>
<p>&nbsp;</p>
<p>On average, the women experienced fewer hot flash symptoms within the 24 hours following exercise compared to women who didn&#8217;t work out.</p>
<p>But the researchers noted the women who were classified as overweight, having a lower level of fitness, or experienced more frequent or more intense hot flashes, noticed the smallest reduction in symptoms.</p>
<p>The researchers said more work needs to be done to see if diet and exercise can help women through menopause.</p>
<p>&#8220;For women with mild to moderate hot flashes, there is no reason to avoid physical activity for the fear of making symptoms worse,&#8221; Elavsky said. &#8220;In fact, physical activity may be helpful, and is certainly the best way to maximize health as women age. Becoming and staying active on a regular basis as part of your lifestyle is the best way to ensure healthy aging and well being, regardless of whether you experience hot flashes or not.&#8221;</p>
<p>The study appears in the current issue of the journal Menopause.</p>

<p>The dreaded “Freshman 15” — unwanted pounds gained by first-year college students — is another visual sign of this lifestyle change. Experts say this phenomenon is probably a misnomer; a 2008 study in the journal Eating Behaviors put this weight gain, in women, at seven pounds. But either way you weigh it, it sucks the bounce out of those ponytails.</p>
<p>College coeds Mary Ryan Rassas, 19, and Anna Fuhrman, 20, once played together on the tennis team at Rossview High School. Rasis, a sophomore at Arizona State University, and Fuhrman, a junior at Auburn University, are both svelte, fit young ladies.</p>
<p>Despite appearances, however, both said that college caused them to gain unwanted weight. So they made a plan to combat the issue by working out together at the local YMCA whenever they were back in Clarksville on school breaks.</p>

<p>In this era of fast-paced everything, even the act of eating a meal has become something we can do on the run. Breakfast comes in bars, lunch can be eaten while speeding down the highway, and dinner is merely an accompaniment to the evening news, squeezed in between other pressing activities. Invariably, when eating plays second string to everything else, every meal becomes “fast food,” as in eaten-very-fast food. If you find yourself wolfing down your meals in a hurry, you’re actually shortchanging yourself in more ways than you might think.</p>

<p>It turns out there’s a reason food tastes so good. You’re supposed to enjoy it—slow down and savor it, not just get it to your stomach as quickly as possible. Chewing your food thoroughly is actually the first step in the complex process of digestion, and if you glaze over it, just chewing the minimum amount of times necessary to get the food down your esophagus, you’re actually compromising this process. And it’s a mistake many people make.</p>

<p>However, several nutritionists said they weren&#8217;t ready yet to embrace the study&#8217;s conclusions.</p>
<p>When researchers from Tel Aviv University&#8217;s Wolfson Medical Center in Israel compared two diet regimens — one featuring alow-carbohydrate breakfast, the other a high-protein, high-carb breakfast — the sweets-with-breakfast group lost more weight after eight months.</p>
<p>&#8220;Although dietary restriction often results in initial weight loss, the majority of obese dieters fail to maintain their reduced weight,&#8221; wrote the study&#8217;s authors.</p>
<p>Diet-related weight loss often triggers hunger and cravings while decreasing suppression of ghrelin, a hormone that stimulates hunger, the researchers said. This may encourage weight gain. But, &#8220;a high protein and carbohydrate breakfast may overcome these compensatory changes and prevent obesity relapse,&#8221; they concluded.</p>
<p>The findings are scheduled for presentation Monday at the Endocrine Society&#8217;s annual meeting in Houston.</p>

			<content:encoded><![CDATA[<p>When it comes to packing a nutritional punch, a colorful salad can&#8217;t be beat. But the dressing you choose may be just as important as the vegetables for maximizing the body&#8217;s intake of important nutrients, a new study shows.</p>
<p>When researchers at Purdue University fed study participants vegetable salads topped with different types of oil, they found that dressings containing canola oil best promoted the absorption of fat-soluble carotenoids.</p>
<p>Carotenoids such as lutein, lycopene, beta-carotene, and zeaxanthin are widely believed to promote good health. Specifically, studies suggest that they lower the risk for certain cancers, <a href="http://www.webmd.com/heart-disease/default.htm">heart disease</a>, and the age-related <a href="http://www.webmd.com/eye-health/picture-of-the-eyes">eye</a> condition <a href="http://www.webmd.com/eye-health/macular-degeneration/default.htm">macular degeneration</a>.</p>
<p>In the study, published online in the journal <em>Molecular Nutrition &amp; Food Research</em>, salads dressed with canola oil, which is a monounsaturated fat, required the least fat intake to get a substantial level of carotenoid absorption.</p>
<p>People who ate dressings made with polyunsaturated soybean oil and butter, which is a saturated fat, had to eat far more fat to get the same nutritional benefit.</p>

<p>Mice in the study that were fed a high-fat diet and allowed to eat whenever they wanted to, not surprisingly, gained weight. In contrast, mice that had their feeding restricted to eight hours a day were protected against obesity, despite the fact that they consumed just as many calories as the unrestricted mice.</p>
<p>The findings suggest that restricting meal times might be an underappreciated way to help people keep off the pounds, the researchers said.</p>
<p>&#8220;Every organ has a clock,&#8221; said study researcher Satchidananda Panda, of the Salk Institute for Biological Studies in La Jolla, Calif. That means there are times that our livers, intestines, muscles and other organs work at peak efficiency, and other times when they are — more or less — sleeping, Panda said.</p>
<p>These metabolic cycles are critical for processes such as cholesterol breakdown, and they should be turned on when we eat and turned off when we don&#8217;t, Panda said. When mice or people eat frequently throughout the day and night, it can throw off those normal metabolic cycles, he added.</p>
<p>Over the 18-week study, the time-restricted mice were protected from the adverse effects of their high-fat diet, and showed improvements in their metabolism compared with the unrestricted mice. They gained 28 percent less weight than unrestricted mice and suffered less liver damage.</p>
